
Tuna-n-Fruit Salad
Who says tuna salad has to be beige and boring? This Tuna & Fruit Salad is a fresh, flavorful twist perfect for one—mixing the savory goodness of tuna with juicy fruit, crunchy toppings, and a tangy vinaigrette. It’s the ideal solo meal when you want something light but satisfying, quirky but balanced. Whether you're cleaning out the fridge or just craving something new, this salad hits all the right notes without making a mess or leaving you with piles of leftovers.
Ingredients
- ¼ cup macaroni small shell is best but whatever you like
- 1 apple cored and sliced or diced
- 1 ¼ tbsp lemon juice
- ½ cup celery sliced
- ¼ cup grapes you could use raisins too
- ⅛ cup green onion
- ½ can tuna I use single serve tuna packets
- ¼ cup mayonnaise
- ¾ tsp curry powder
- ½ tsp Dijon
- salt to taste
- ¼ cup almonds sliced
- salad greens
Instructions
- Cook macaroni according to package, rinse with cold water, drain and chill
- Place almonds in oven at 350 for about 5 minutes until golden
- Mix apple, lemon juice, celery, grapes, onion and tuna, breaking tuna up
- Combine mayo, curry powder and Dijon.
- Add dressing to tuna and fruit mix, let chill for 30 minutes for flavors to combine
- Mix macaroni and half of almonds into tuna and fruit mixture
- Place salad greens on plate, top with tuna and fruit, sprinkle with remaining almonds
