This is the ultimate cozy-up soup—made with a classic veggie trio, creamy potatoes (instant or leftover, we don’t judge), a splash of milk, and plenty of melty cheddar or jack cheese. It’s quick, comforting, and tastes like a warm hug from autumn itself.

Creamy Harvest Bowl
A lil of this and a lil of that come together to make this hearty soup. You can use a lil mashed potato or if you use them instant mashed.
Ingredients
- 1 tbsp butter
- ½ onion fine diced
- 1 carrot thin slices
- ½ stalk celery thin slices
- 1 cup chicken broth
- 1 serving instant potatoes or a lil leftover mashed
- ¼ cup milk
- ⅛ tsp seasoned salt
- ⅛ tsp celery seed
- pepper to taste
- ¼ cup cheese diced ~Jack or Cheddar are normal but use what you have or like
- pinch mace or nutmeg
Instructions
- Melt butter over medium heat, add onion and cook till limp
- Add celery carrot & broth, cover, cook over low heat until veggies are tender, about 10 minutes
- Remove from heat add prepared instant potatoes or leftover mashed, stir
- Add milk, season salt, celery seed and pepper, stir
- Return to heat to heat through but do not boil
- Remove from heat, add cheese and cover allowing cheese to melt partially
- Sprinkle with mace
