The great thing about Chef’s Salads is just that, they’re made by the Chef so pretty much anything that you want to throw into them works. In my opinion they’re the catch-all of the salad world. In this salad I give a lil Mexican flair to a Chef’s Salad

Mexican Chef Salad
A combo of meats, orange, avocado and olives come together atop a bed of greens and all that nestles in under a vinaigrette of oil, vinegar, lime and zesty spices
Ingredients
- 1 orange
- 1 ½ cup lettuce greens
- 2 green onions finely chopped whites and part of green
- ½ cup protein of choice ham, turkey, chicken, tongue, roast beef, tofu
- 1 ½ tbsp oil I like olive or avocado
- ¾ tsp white wine vinegar
- 1 tsp lime juice can use lemon
- 1 clove garlic mashed, minced or grated
- ⅛ tsp sugar
- ⅛ tsp chili powder
- ⅛ tsp ground coriander
- ½ avocado sliced thin ~~ or use a whole, up to you
- pitted ripe olives whole, sliced or diced
Instructions
- Supreme an orange and set aside
- Mix lettuce and onions
- Julienne or dice the protein
- Stir together oil, vinegar, citrus and spices ~ Pour over salad
- Garnish with orange and avocado slices
