If you live somewhere that you can’t get halibut, any good flaky white fish will do here. The fish is added last so it stays moist. This is a great supper soup with buttered French bread or a good crusty San Francisco sourdough roll.

Pacific Halibut Soup
Hearty winter supper made from tomatoes, rice, green beans, onion, celery and halibut though any white fish will work
Equipment
Ingredients
- ½ tbsp oil
- ½ onion diced
- 1 garlic clove
- ¼ cup celery thinly sliced
- ½ can tomatoes
- 1 cup chicken broth
- ¼ tsp Italian seasoning can use oregano and basil ~ 1/8 tsp each
- 1 tbsp rice
- 4 oz cut green beans frozen/thawed or fresh
- ½ lb halibut or other white fish, deskinned, deboned, cut into 1" squares
- salt & pepper to taste
- grated parmesan cheese optional
- parsley optional
Instructions
- Heat oil in pot, add onion, celery & garlic ~ cook until onion is limp
- Add tomatoes with their liquid, break them up with spoon
- Add broth, spices and rice
- Cover and simmer 15 minutes
- Add beans and simmer covered for another 10 minutes
- Add fish and let simmer 5 minutes until it readily flakes with a fork
- Add salt & pepper to taste, top each serving with parmesan and parsley if wanted
