Dilled Shrimp Salad
Marinated shrimp are the star of this supper salad. Marinate an hour or longer before putting over the salad greens. Don't let the name fool you, this isn't like dill pickles LOL. This salad is super refreshing and is amazing for those hot summer nights. Make the marinade up the night before then when you get home you can put your greens on the plate then drop the cheese into the shrimp, stir and pour it all on top and supper is done in under 5 minutes.
Ingredients
- 1 ½ tbsp olive oil or any salad oil you like
- 1 tsp white wine vinegar
- ½ tsp lemon juice
- ⅛ tsp dill weed
- ⅛ tsp Dijon mustard
- dash garlic powder
- dash salt
- dash pepper
- ¼ lb small cooked shrimp
- ¾ cup romaine or any salad greens you prefer
- ¾ cup butter lettuce or any salad greens you prefer
- ⅛ cup Jack cheese cubed or shredded
Instructions
- Combine oil, vinegar, lemon, dill weed, Dijon, garlic powder, salt and pepper in a jar and shake well
- Pour over shrimp and chill at least an hour
- Before serving add cheese to shrimp mixture and stir
- Place salad greens on plate, pour mixture over
