Leftover ham never had it so good. Toss it into a pot with cabbage, simmer it into a soothing broth, and crown it with sour cream. Simple, satisfying, and just rustic enough to feel fancy.
You can grab ham from the deli as well, if you want to get fancy with some flavor of Boar’s Head ham. If going the deli route, I suggest adding for your slices as a supper cut.

Portuguese Peasant Pot
Super quick soup using leftover ham and cabbage
Equipment
Ingredients
- 1 ½ tbsp butter
- 1 tbsp celery chopped
- ⅛ cup onion chopped
- ½ tbsp parsley
- ½ tbsp flour
- 1 cup chicken broth
- ¼ lb ham diced ~ this can be leftover or you can buy sliced from deli, if buying from deli I suggest asking for the supper cut
- ¼ tsp bay leaf crumbled
- ½ cup cabbage finely shredded
- sour cream optional
Instructions
- Melt 1 Tbsp butter over medium heat
- Add celery, onion and parsley cooking till limp
- Stir in flour then add broth and cook till bubbling, stirring regularly
- Add ham, bay & cabbage and other 1/2 Tbsp of butter
- Cook until ham is heated through and cabbage is limp
- Serve with a dollop of sour cream
