
Italian Wedding Soup - No Meat
This is a light twist on a traditional Italian Wedding Soup
Equipment
Ingredients
- 2 cups broth chicken or beef
- 2 oz vermicelli
- 2 tbsp butter
- ⅓ cup grated parmesan cheese
- 1 egg yolk
- ¼ cup whipping cream
Instructions
- Bring broth to a boil
- Add vermicelli, broken into small pieces, add to pot and cook 7-9 minutes until tender
- In a bowl blend butter, cheese and egg
- Gently beat in cream
- Add some hot broth to bowl, stirring constantly to temper
- Add mixture back to pot, stirring constantly until heated through
