Tostada

In 15 minutes or less this recipe leads you to a quick, filling, tasty supper for one. Ground protein (your choice on meat or even grab for the tofu), kidney beans, spices, lettuce, jack cheese, tomatoes and chips all come together for a great meal.   • Add lettuce to plate and surround with tomato wedges
  • Oil the bottom of a frying pan let it heat on medium for a minute
  • Add onion and ground protein, breaking up the protein
  • Once the meat is brown and onions limp, add the beans, ketchup and spices
  • Cover and let this simmer about 5 minutes to allow flavors to meld and to slightly thicken
  • Pour into center of plate
  • Surround with chips
  • Optional – you can add cheese, sour cream, whatever you like
