instant potatoes
or a lil leftover mashed

diced ~Jack or Cheddar are normal but use what you have or like

mace
or nutmeg

Instructions
Melt butter over medium heat, add onion and cook till limp
Add celery carrot & broth, cover, cook over low heat until veggies are tender, about 10 minutes
Remove from heat add prepared instant potatoes or leftover mashed, stir
Add milk, season salt, celery seed and pepper, stir
Return to heat to heat through but do not boil
Remove from heat, add cheese and cover allowing cheese to melt partially
Sprinkle with mace
